Tart Cherries

Tart cherries are produced by drying Montmorency or Balaton cherries, which are often grown in Michigan, Wisconsin and parts of Canada and France. The history of Montmorency tart cherries goes back to ancient Rome, where legionnaires discovered the cherry and brought it with them on their conquests. They used the cherry for food and the wood to build weapons and repair gear.

Harvest Time & Growth Cycle

YSA is proud to offer cherries grown near the nutrient-rich sandy shores of Lake Michigan. The climate combines icy-cold winters and temperate summers, ideal for growing the most flavorful fruit. During harvest, the growers work 24 hours a day to get the perfectly ripened fruit to the processing plant where most are quickly frozen to preserve flavor and quality.

Products

Tart Cherries are a delicious addition to a breakfast cereal, bar snack, baked item or salad. They are made from frozen pitted Montmorency or Balaton tart cherries that have been gently bathed in a sugar solution until a specific brix level is attained prior to entering the dryer.
